Butterflying a leg of lamb

Ask your butcher to butterfly the leg if you’re not up to the challenge or follow this explanation:

With the lamb leg on a board, you should see three distinct lines denoting the three muscles making up the whole leg. Using a sharp knife, cut along these lines to open out the lamb leg – you want the outside of the leg to lie flat on the board. Cut away any sinew. Slash any thicker sections of meat to give an even thickness across the whole piece of meat. Lay a piece of clingfilm or baking parchment over the meat and firmly hit with a rolling pin to flatten it slightly.
